I started making these pumpkin cookies when my daughter was little (3 or 4 years old). I shared them with my friends at parties and such, and all of the kids (and parents alike) gobbled them up. Eventually, I was asked to make them for every gathering I would attend.
Now, come Thanksgiving, I make them again. My daughter dislikes pumpkin pie, and something I need to have on the dessert menu for Thanksgiving dinner must include pumpkin. So, what better than these little guys.
Here are a few tips for making them: 1) Use parchment on your cookie sheets — it makes it much, much easier for cleanup. 2) If you have one, use a two tablespoon cookie scoop to portion out the dough; they’ll cook evenly if they are uniform in size (plus, it just makes it easier to plop down the dough). 3) The glaze is totally optional, and truth be told, I’ve only made it a handful of times, as I don’t think they need it – totally up to you.

Soft Pumpkin Cookies
Ingredients
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup butter 1 stick, softened
- 1 cup pumpkin puree NOT pumpkin pie filling
- 1 egg
- 1 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350° F. Grease cookie sheets or line with parchment paper..
- In a medium-sized bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice and salt. Set aside.
- Using your mixer, cream the sugars and butter in a large bowl until combined well. Beat in the egg, pumpkin puree and vanilla until smooth. Beat in the flour mixture gradually at a medium speed.
- Drop by tablespoon with a cookie scoop onto prepared baking sheets.
- Bake for 15 to 18 minutes or until edges are firm (do not overbake). Cool on baking sheets for 2 minutes, then remove and cool on wire racks until completely cool.
- If desired, drizzle glaze over them.
- Glaze:
- cups sifted powdered sugar
- tablespoons milk
- tablespoon melted butter
- teaspoon vanilla extract
- Combine with a whisk (or mixer) until smooth.
